Burdock Root and Leaves (Arctium lappa)



A bitter and slightly sweet root. Roots and leaves are edible. Drying and cooling in nature.  Anabolic and yin building. Burdock has an affinity for the liver, skin, and kidneys.

The roots can be peeled like a carrot and added to any stir fry. It helps to soak the peeled root in cold water to remove some of the extra starch.
